  • 1/4 cup apple cider
  • 1/4 cup molasses
  • 1 egg
  • 21/3 cups gluten-free baking flour blend (with binder)
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 11/2 teaspoons ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon salt

Instructions

  1. In a mixing bowl, cream together softened butter and 1 cup of sugar until light and fluffy. Mix in applesauce, apple cider, molasses, egg, and vanilla until combined.
  2. In another bowl, whisk together the remaining dry ingredients. Gradually add to the wet mixture in three batches until just combined. Cover and refrigerate for at least two hours or overnight.
  3. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  4. Scoop tablespoon-sized portions of dough into a bowl filled with the remaining sugar and roll to coat each ball. Place on the prepared baking sheet.
  5. Bake for about 10–12 minutes or until edges are set but centers remain soft. Cool slightly before transferring to wire racks.
