- 3 1/2 pounds bone-in chicken parts
- 1 tablespoon chili powder
- 1 tablespoon ground cinnamon
- 1 tablespoon brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon coarse black pepper
- 1/4 cup chopped fresh cilantro
- 1 serrano chile, minced
- 1/2 cup butter, melted
- Juice of 1 lime
Instructions
- Prepare the spice rub by mixing chili powder, cinnamon, brown sugar, salt, and black pepper in a bowl. Coat the chicken thoroughly with the spice blend.
- Grill the chicken over medium heat for about 30 minutes or until fully cooked (internal temperature reaches 165°F).
- While grilling, prepare the lime butter by combining melted butter, cilantro, serrano chile, onion, lime juice, and black pepper in a separate bowl.
- Drizzle the lime butter over chicken right before serving or serve it on the side for dipping.
