- 7 cups mixed spring greens
- 1 1/4 cups orange segments
- 1/2 cup pomegranate seeds
- 1/2 cup crumbled feta cheese
- 1/2 cup roughly chopped candied pecans
- 1/3 cup olive oil
- 1 tablespoon honey
- 2 teaspoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon minced shallot
- Salt and pepper to taste
Instructions
- In a large mixing bowl, wash and combine 7 cups of mixed spring greens with 1 1/4 cups of orange segments, 1/2 cup of pomegranate seeds, 1/2 cup of crumbled feta cheese, and 1/2 cup of roughly chopped candied pecans.
- In a small bowl, whisk together 1/3 cup of olive oil, 1 tablespoon of honey, 2 teaspoons of Dijon mustard, 2 tablespoons of apple cider vinegar, and 1 tablespoon of minced shallot. Season with salt and pepper to taste.
