- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) canned white beans, rinsed
- 1 green bell pepper, chopped
- 1 medium yellow onion, chopped
- 4 cloves fresh garlic, minced
- 2 tbsp Cajun seasoning
- 4 cups low-sodium chicken broth
- 1 cup heavy cream or coconut milk
Instructions
- Chop the onion and bell pepper finely. Mince the garlic and dice the chicken into bite-sized pieces.
- In a large pot over medium heat, add a splash of olive oil. Once hot, sauté the onions and bell peppers until softened (about 5 minutes).
- Stir in the minced garlic and diced chicken; cook until the chicken is no longer pink. Add Cajun seasoning and mix well.
- Pour in the chicken broth and add the white beans. Bring to a gentle simmer for about 10 minutes.
- Lower the heat and stir in heavy cream or coconut milk; warm through without boiling.
- Serve in bowls garnished with fresh herbs or tortilla chips.
