- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach (sautéed)
- 4 cloves Garlic (minced)
- 1 small Onion (optional, finely chopped)
- 1 large Egg
- 1 cup Breadcrumbs (or oats/almond flour)
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes
- 1 tbsp Italian Seasoning
- to taste Salt
- to taste Pepper
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the spinach in a skillet over medium heat until wilted, then chop finely.
- In a mixing bowl, combine ground meat, sautéed spinach, minced garlic, chopped onion, egg, breadcrumbs, grated cheese, Italian seasoning, salt, pepper, and red pepper flakes. Mix until just combined.
- Form the mixture into meatballs about 1 inch in diameter and place them on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until cooked through and golden on top.
- Serve hot with your choice of sides.
