Instructions
- Preheat your oven to 325°F (163°C) and prepare an 8×5 loaf pan with nonstick spray and parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until combined.
- In another bowl, mix the egg, sugar, and vegetable oil until well blended.
- Combine wet and dry ingredients; stir until thick.
- Mix in buttermilk, vanilla extract, and mashed bananas until fully incorporated.
- Pour batter into the prepared loaf pan and sprinkle walnuts on top.
- Bake for 60-75 minutes or until a knife comes out clean.
