- 1 ½ cups all-purpose flour
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup mashed banana (about 2 large bananas)
- 2 large eggs
- ½ cup granulated sugar
- ¼ cup whole milk Greek yogurt
- ½ cup diced strawberries
- Optional: ½ cup chopped walnuts
Instructions
- Preheat oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
- In a large bowl, mash the bananas until smooth. Add eggs, sugar, and Greek yogurt; mix well.
- Gently fold the dry ingredients into the wet mixture until just combined. Fold in strawberries and walnuts.
- Pour batter into prepared pan and bake for 50-55 minutes or until a toothpick comes out clean.
- Let cool in the pan for at least 20 minutes before transferring to a wire rack to cool completely.
