Ingredients

  • 2 cups cream cheese (softened)
  • 1 cup powdered sugar
  • 1 cup fresh strawberries (finely chopped)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 cups white chocolate chips (or candy melts)

Instructions

  1. In a mixing bowl, combine softened cream cheese, powdered sugar, chopped strawberries, vanilla extract, and lemon juice. Beat until smooth and chill for 30-45 minutes.
  2. In another bowl, mix graham cracker crumbs with melted butter and granulated sugar; press into the bottom of egg molds.
  3. Spoon chilled cheesecake mixture into each mold on top of the crumb base and freeze for 2-3 hours.
  4. Melt white chocolate chips in a microwave-safe bowl; add food coloring if desired. Dip each frozen cheesecake egg into the melted chocolate to coat.
  5. Decorate with sprinkles or extra chocolate drizzle while still wet.
  6. Let set at room temperature for about 20 minutes before serving chilled.
