Ingredients
- 2 cups cream cheese (softened)
- 1 cup powdered sugar
- 1 cup fresh strawberries (finely chopped)
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter
- 2 cups white chocolate chips (or candy melts)
Instructions
- In a mixing bowl, combine softened cream cheese, powdered sugar, chopped strawberries, vanilla extract, and lemon juice. Beat until smooth and chill for 30-45 minutes.
- In another bowl, mix graham cracker crumbs with melted butter and granulated sugar; press into the bottom of egg molds.
- Spoon chilled cheesecake mixture into each mold on top of the crumb base and freeze for 2-3 hours.
- Melt white chocolate chips in a microwave-safe bowl; add food coloring if desired. Dip each frozen cheesecake egg into the melted chocolate to coat.
- Decorate with sprinkles or extra chocolate drizzle while still wet.
- Let set at room temperature for about 20 minutes before serving chilled.
