  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar
  • 1 tablespoon lemon juice
  • ¼ cup oat flour
  • ¼ cup all-purpose flour
  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • ¼ teaspoon salt
  • 1 ½ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, blend melted coconut oil with cane sugar. Add the egg and mix well.
  3. Gradually stir in all-purpose flour, oat flour, cinnamon, and salt until combined.
  4. In another bowl, combine diced strawberries with cane sugar and lemon juice; mix gently.
  5. Spread half of the base mixture in an 8×8 baking dish; layer the strawberry filling on top and crumble the remaining base over it.
  6. Bake for approximately 45 minutes or until golden brown. Allow cooling before cutting into squares.
