- 2/3 cup buttermilk
- 1/2 cup lemon juice
- 1 cup granulated sugar (for lemon curd)
- 4 large eggs
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 4 cups sliced strawberries
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in buttermilk until just combined. Drop spoonfuls onto a parchment-lined baking sheet and bake for 12-15 minutes or until golden brown.
- For the lemon curd, whisk eggs, sugar, and lemon juice in a saucepan over low heat until thickened (about 10 minutes). Let cool.
- Whip heavy cream with powdered sugar until soft peaks form.
- To assemble, slice shortcakes horizontally, layer with lemon curd and strawberries, top with whipped cream, and replace the shortcake top.
