- 5 ounces organic spinach
- 2 cups (8 ounces) strawberries, halved
- 1 large avocado, sliced
- ½ small red onion, thinly sliced
- ½ cup feta crumbles
- ⅓ cup raw sliced almonds
- ¼ cup chopped shelled roasted pistachios
- 3 tablespoons balsamic vinegar
- ¼ cup olive oil
- 1 garlic clove (minced)
- ½ teaspoon dijon mustard
- ½ tablespoon strawberry jam
Instructions
- Prepare the vinaigrette by mixing all dressing ingredients in a mason jar or bowl. Shake until blended.
- In a frying pan over medium heat, toast the sliced almonds for about 2–5 minutes until golden brown; let cool.
- In a large bowl, layer the spinach, strawberries, avocado, red onion, feta, toasted almonds, and pistachios. Drizzle with vinaigrette or serve on the side.
