- 4 yellow plantains
- 2 tbsp avocado oil
- ½ medium onion (finely diced)
- 2 garlic cloves (finely minced or grated)
- ½ green bell pepper (diced)
- ½ red bell pepper (diced)
- 1 tsp kosher salt (more for taste)
- ½ tsp ground black pepper
- 1 lb ground beef
- 1 tbsp adobo seasoning
- ¼ cup tomato sauce
- ¼ cup beef broth
- ¼ – ½ tsp cayenne pepper
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Cut ends off plantains, score the skin lengthwise, and peel.
- Coat plantains with 1 tablespoon avocado oil and roast for 30 minutes, flipping halfway through.
- In a skillet, heat remaining avocado oil over medium heat; sauté onion, garlic, and peppers until soft.
- Increase heat to medium-high; add ground beef and brown evenly.
- Stir in adobo seasoning, tomato sauce, broth, salt, black pepper, and cayenne; simmer until thickened.
- Cut slits in roasted plantains, stuff with beef mixture, and serve hot.
