Ingredients
- 4 pieces (4 oz each) lean beef filet mignons
- 1 teaspoon table salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons grapeseed oil
- 3 tablespoons unsalted butter (melted)
- 1 teaspoon fresh lemon juice
- 1 large egg yolk
- 1 tablespoon room temperature water
- 2 tablespoons minced fresh parsley
- 2 tablespoons minced fresh chives
Instructions
- Season filet mignons with salt and pepper.
- Heat grapeseed oil in a grill pan over medium-high heat.
- Sear filet mignons for about 5 minutes on one side.
- Flip and cook for another 4 to 6 minutes for medium doneness.
- Rest steaks covered with aluminum foil for about 10 minutes.
- Prepare the bearnaise sauce by blending egg yolk, lemon juice, salt, and pepper.
- Gradually drizzle in melted butter while blending until thickened.
- Stir in herbs, then serve steak topped with bearnaise sauce.
