- ¾ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- ½ teaspoon cream of tartar

- 1 cup spring-colored M&Ms
- ½ cup Easter sprinkles
- 3 tablespoons unsalted butter, softened (for frosting)
- 1 ½ cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- ⅛ teaspoon salt (for frosting)
- 2 tablespoons heavy whipping cream or milk
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by lining it with foil and spraying with nonstick cooking spray.
- In a mixing bowl, beat together the softened butter and granulated sugar until creamy. Add the egg and vanilla extract; mix well.
- Gradually mix in baking soda, salt, and cream of tartar. Slowly incorporate flour until fully combined, then gently stir in M&Ms and sprinkles.
- Press the batter into the prepared pan and bake for about 19–22 minutes until edges are lightly golden. Allow cooling completely before frosting.
- For the frosting, beat softened butter until smooth. Gradually add powdered sugar and mix in salt and vanilla extract. Add heavy whipping cream one teaspoon at a time until you reach desired consistency.
- Decorate the cooled cookie cake with frosting using a piping bag or ziplock bag, topping with additional M&Ms and sprinkles.
