Ingredients
- 4 medium ripe peaches
- 1 ½ cups all-purpose flour
- 1 cup sugar
- 6 tablespoons unsalted butter (room temperature)
- 1 egg
- ½ cup buttermilk
- 2 teaspoons pure vanilla extract
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- Sparkling sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and butter a 9" deep-dish pie plate.
- Peel and slice peaches into wedges; set aside on paper towels.
- In one bowl, whisk together flour, baking powder, and salt. In another, cream butter and sugar until fluffy, then mix in the egg, buttermilk, and vanilla.
- Gradually combine the dry ingredients with the wet mixture until just mixed.
- Pour batter into the prepared pie plate, arrange peach slices on top, and sprinkle with sparkling sugar.
- Bake for about 60 minutes or until golden brown and a toothpick inserted comes out clean.
