  • 8 cups cauliflower rice

  1. Marinate chicken: In a large Ziplock bag, mix together 1/2 cup of coconut milk, sweet chili sauce, lime juice, salt, and pepper. Add chicken breasts and marinate for 30 minutes to 1 hour.
  2. Preheat grill: Heat the grill to medium-high and grease grates.
  3. Grill chicken: Remove chicken from marinade and grill each breast for about 4-5 minutes on one side, then flip and grill for another 3-4 minutes until fully cooked. Let rest for 5 minutes.
  4. Prepare cauliflower rice: Sauté cauliflower rice in a skillet with coconut oil, seasoning with salt and pepper. Add remaining lime juice and coconut milk before stirring in chopped cilantro.
