Ingredients
- 3/4 cup light coconut milk
- 1/2 cup sweet chili sauce
- 1 lime
- 4 chicken breasts (approximately 2 lbs)
- 8 cups cauliflower rice
- Fresh cilantro and parsley for garnish
Instructions
- Marinate chicken: In a large Ziplock bag, mix together 1/2 cup of coconut milk, sweet chili sauce, lime juice, salt, and pepper. Add chicken breasts and marinate for 30 minutes to 1 hour.
- Preheat grill: Heat the grill to medium-high and grease grates.
- Grill chicken: Remove chicken from marinade and grill each breast for about 4-5 minutes on one side, then flip and grill for another 3-4 minutes until fully cooked. Let rest for 5 minutes.
- Prepare cauliflower rice: Sauté cauliflower rice in a skillet with coconut oil, seasoning with salt and pepper. Add remaining lime juice and coconut milk before stirring in chopped cilantro.
- Serve: On plates, layer cauliflower rice topped with grilled chicken and garnish with fresh herbs.
