Ingredients
- 2 medium-sized sweet potatoes, peeled and diced
- 2 cans black beans, drained and rinsed
- 1 can diced tomatoes (fire-roasted recommended)
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
Instructions
- Prepare all ingredients by peeling and dicing sweet potatoes, chopping onion and bell peppers, and mincing garlic.
- (Optional) In a skillet over medium heat, sauté onion in olive oil until translucent. Add garlic and bell peppers; cook for another 3 minutes. Stir in spices for one minute.
- Transfer sautéed vegetables (if cooked) into the crock pot. Add sweet potatoes, black beans, diced tomatoes, and remaining spices.
- Cover and set the crockpot to Low for 6–8 hours or High for 3–4 hours.
- Adjust consistency by adding vegetable broth or canned tomato liquid as desired.
- Taste and adjust seasoning before serving.
