  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup granulated sugar for cinnamon swirl
  • 1 tbsp ground cinnamon for cinnamon swirl
  • 1 cup powdered sugar for glaze
  • 2 tbsp milk for glaze
  • 1/2 tsp vanilla extract for glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, mix together mashed sweet potatoes, granulated sugar, brown sugar, vegetable oil, eggs, buttermilk, and vanilla extract until smooth.
  3. In another bowl, sift together all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Gradually fold the dry mixture into the wet ingredients using a rubber spatula until just combined.
  5. For the cinnamon swirl mixture, combine granulated sugar with ground cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon swirl mixture on top. Add the remaining batter and gently swirl with a knife before topping with remaining cinnamon mixture.
  7. Bake for 35-40 minutes or until a toothpick comes out clean.
  8. Allow to cool completely on a wire rack before drizzling with glaze made from whisking powdered sugar with milk and vanilla.
