Ingredients
- 2 cups sliced peaches
- 8 ounces softened cream cheese
- 1 cup shredded cheese (mozzarella or cheddar)
- 1/4 cup chopped green onions
- 4 large flour or corn tortillas
- 2 tablespoons olive oil
Instructions
- In a mixing bowl, combine sliced peaches, cream cheese, shredded cheese, and green onions; mix well.
- Heat a non-stick skillet over medium heat. Place one tortilla in the skillet and spread filling on half of it. Fold the tortilla over.
- Drizzle olive oil around the edges and cook for 3-5 minutes until golden brown. Flip carefully and cook for another 3-5 minutes.
- Remove from skillet, let cool slightly, slice into wedges, and serve warm.
