  • 10 cups water
  • 1 whole yellow onion (with skin if organic)
  • 2 green onions or 1 Korean leek (for broth)
  • 2 thick slices of ginger
  • 1/2 medium radish, quartered into thin slices
  • 2 tablespoons chopped garlic
  • 1 tablespoon soy sauce
  • 1.5 teaspoons sea salt

Instructions

  1. In a large pot, combine the beef short ribs and water; bring to a boil over medium-high heat.
  2. Reduce heat to low and add the yellow onion (with skin), green onions (or leek), ginger slices, and optional green onion roots.
  3. Cover and simmer for about 90 minutes to develop flavors.
  4. Remove solids from broth; strain if necessary.
  5. Add radish slices, garlic, soy sauce, and sea salt; simmer for another 10–15 minutes until radishes soften.
  6. Serve hot, garnished with sliced green onions or leeks.
