Ingredients
- 1.5 lbs beef short ribs
- 10 cups water
- 1 whole yellow onion (with skin if organic)
- 2 green onions or 1 Korean leek (for broth)
- 2 thick slices of ginger
- 1/2 medium radish, quartered into thin slices
- 2 tablespoons chopped garlic
- 1 tablespoon soy sauce
- 1.5 teaspoons sea salt
Instructions
- In a large pot, combine the beef short ribs and water; bring to a boil over medium-high heat.
- Reduce heat to low and add the yellow onion (with skin), green onions (or leek), ginger slices, and optional green onion roots.
- Cover and simmer for about 90 minutes to develop flavors.
- Remove solids from broth; strain if necessary.
- Add radish slices, garlic, soy sauce, and sea salt; simmer for another 10–15 minutes until radishes soften.
- Serve hot, garnished with sliced green onions or leeks.
