Instructions
- In a large pot, combine coconut milk, chicken broth, grated ginger, minced garlic, and lime juice. Bring to a gentle simmer over medium heat.
- Stir in soy sauce and adjust seasoning as needed. Let simmer for about 10 minutes.
- Add frozen chicken potstickers to the pot and cook according to package instructions (8-10 minutes).
- Stir in julienned carrots and sliced green onions. Cook for an additional 2-3 minutes until vegetables are tender.
- Remove from heat and garnish with chopped cilantro.
