- 3 very ripe bananas
- ⅓ cup melted butter
- 1 large egg
- ¾ cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1½ cups unbleached all-purpose flour
- ½ teaspoon baking soda
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the bananas and mix in melted butter until combined.
- Stir in the egg, sugar, and vanilla extract until smooth.
- In another bowl, combine flour, baking soda, and salt; then add to the wet mixture. Mix gently until just combined.
- Pour batter into a greased 8×4 inch loaf pan and bake for about one hour or until a toothpick inserted comes out clean.
- Let cool before slicing.
