- 1 head cauliflower
- 2 Tbsp olive oil
- 1 1/2 cup heavy whipping cream
- 4 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup gruyere cheese
- 1/2 cup shredded Monterey Jack cheese
- Garlic powder
- Onion powder
- Salt
- Pepper
Instructions
- Preheat your oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes until tender and golden.
- In a large pot over low heat, combine heavy cream and cream cheese. Whisk until smooth; then add cheddar, gruyere, Monterey Jack, garlic powder, and onion powder until melted.
- Fold in the roasted cauliflower until well coated in the sauce. Serve hot.
