Ingredients
- 4 portobello mushroom caps
- 2 tbsp balsamic vinegar
- 1 tbsp low sodium soy sauce
- 1 tbsp olive oil
- 1 tbsp chopped rosemary
- 4 thick slices red onion
- 4 oz reduced fat Swiss cheese (sliced thin)
- 4 whole wheat low calorie buns
- Baby spinach, sliced tomato, and avocado for toppings
Instructions
- In a large bowl, whisk together balsamic vinegar, soy sauce, olive oil, chopped rosemary, and Montreal steak seasoning.
- Add portobello caps to the marinade and let sit for 20-30 minutes.
- Preheat your grill over medium heat; oil the grate or grill pan.
- Grill the marinated mushrooms for 5-7 minutes per side, basting with reserved marinade.
- Add Swiss cheese on top of mushrooms during the last minute of grilling until melted.
- Grill onions for about 1 minute per side; toast buns until golden.
- Assemble by layering spinach on each bun followed by the grilled mushroom cap and toppings.
