- 1 ¾ cups mashed ripe bananas (about 3 ½ large or 5 medium bananas)
- 2 eggs
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 cups white whole wheat flour (or regular whole wheat flour or all-purpose flour)
Instructions
- Preheat your oven to 350°F. Spray a 9×5-inch loaf pan with cooking spray and line the bottom with parchment paper.
- Melt the butter in a large bowl. Whisk in honey and mashed bananas until well combined, then add eggs and mix until smooth.
- Stir in baking soda, salt, cinnamon, and vanilla extract until evenly mixed.
- Gently fold in flour using a rubber spatula until just combined—some lumps are fine.
- Pour batter into the prepared pan and bake for 55-65 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
