- 1 cup granulated sugar
- 4 large eggs, separated
- 1/2 cup unsalted butter, melted and cooled
- 2/3 cup all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon grated lemon zest
- 1/2 cup freshly squeezed lemon juice
- 1 1/2 cups whole milk, at room temperature
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 325°F (163°C). Grease and line an 8-inch square baking dish with parchment paper.
- In a large bowl, beat the egg yolks with granulated sugar until pale and creamy. Mix in melted butter, lemon zest, and lemon juice until combined.
- Sift in flour and salt, mixing until just combined. Gradually whisk in milk until smooth.
- In a clean bowl, whip egg whites until stiff peaks form. Gently fold into the batter in three additions.
- Pour the batter into the prepared dish and bake for 40-45 minutes or until golden brown on top and slightly jiggly in the center.
- Allow cooling completely before slicing and dusting with powdered sugar if desired.
