Instructions
- Prepare the vinaigrette by combining all ingredients in a glass jar and whisk until smooth.
- In a large bowl, toss together cherry tomatoes, peach wedges, and pitted cherries with one-third of the vinaigrette. Let it sit for 15 minutes.
- Once marinated, break apart burrata cheese over the salad mixture and drizzle with remaining vinaigrette.
- Top with toasted pumpkin seeds and garnish with fresh herbs before serving.
