Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 cup quartered red grapes
- 2 diced celery ribs
- ½ cup sliced raw almonds
- 3 sliced green onions
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely chopped tarragon
- Juice of 1 lemon (about 3 tablespoons)
- Kosher salt and freshly ground black pepper to taste
Instructions
- Cook the chicken breasts in boiling water for about 15 minutes or until fully cooked. Allow to cool before dicing.
- In a mixing bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
- In a large bowl, combine diced chicken, grapes, celery, green onions, almonds, parsley, and tarragon. Pour the dressing over the mixture.
- Gently fold all ingredients together until well combined. Adjust seasoning if needed.
- Cover and refrigerate for at least one hour before serving to enhance flavors.
