- 64 ounces beef broth or vegetable broth

- 24 slices French bread baguette, toasted
- 3/4 cup Gruyère or Swiss cheese, shredded
Instructions
- Heat olive oil and butter in a large pot over medium heat. Add sliced onions and cook slowly, stirring occasionally until golden brown and caramelized (about 30-40 minutes).
- Stir in minced garlic and cook for an additional minute. Pour in apple cider vinegar or dry apple juice to deglaze the pot.
- Add beef broth (or vegetable broth), pepper, and salt; bring to a boil, then reduce heat and let simmer for about 30 minutes.
- Preheat oven broiler. Arrange baguette slices on a baking sheet and toast until golden brown on both sides.
- Ladle soup into oven-safe bowls, top with toasted baguette slices and shredded cheese, then broil until bubbly and golden before serving.
