  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cubed
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer or with a hand mixer, cream together cold butter and sugars until smooth. Add the cold egg and vanilla extract; mix until combined.
  4. Gradually incorporate the dry ingredients along with chopped chocolate and chocolate chips on low speed until just combined.
  5. Scoop dough using a large cookie scoop and place on prepared sheets. Press extra chocolate chips on top if desired.
  6. Bake for 12-13 minutes until edges are golden brown. Let cool on sheets for about 5 minutes before transferring to wire racks.
