- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter, cubed
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, cold
- 2 teaspoons pure vanilla extract
- 4 ounces semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips
Instructions
- Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
- In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
- In a stand mixer or with a hand mixer, cream together cold butter and sugars until smooth. Add the cold egg and vanilla extract; mix until combined.
- Gradually incorporate the dry ingredients along with chopped chocolate and chocolate chips on low speed until just combined.
- Scoop dough using a large cookie scoop and place on prepared sheets. Press extra chocolate chips on top if desired.
- Bake for 12-13 minutes until edges are golden brown. Let cool on sheets for about 5 minutes before transferring to wire racks.
