- 1 cup fresh strawberries, finely chopped
- 1 cup vanilla wafer cookies, finely crushed
- 8 oz cream cheese, softened
- 1 cup powdered sugar, sifted
- 1 cup white chocolate chips
Instructions
- Wash and hull the strawberries; pat dry and chop finely.
- In a mixing bowl, combine the cream cheese, crushed vanilla wafers, powdered sugar, and chopped strawberries until creamy.
- Roll tablespoon-sized portions of the mixture into balls and place them on a parchment-lined baking sheet.
- Chill the truffles in the refrigerator for about 1 hour until firm.
- Melt white chocolate chips in a microwave-safe bowl in short bursts until smooth.
- Coat each chilled truffle in melted chocolate and return to parchment paper to set.
