Ingredients
- 1 teaspoon oil
- 3 cloves garlic (chopped)
- 10 ounces fresh baby spinach
- 16 ounces vegan cream cheese (room temperature)
- ⅓ cup vegan mayo
- 1 (14-ounce) can artichoke hearts (drained and chopped)
- ¼ cup nutritional yeast
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Preheat your oven to 400°F.
- In a large pan, heat the oil over medium heat. Add chopped garlic and sauté until browned (about 2 minutes). Stir in the baby spinach and cook until wilted, then remove from heat.
- In a baking dish, mix together the vegan cream cheese and vegan mayo until smooth. Fold in the sautéed spinach, chopped artichokes, nutritional yeast, salt, and black pepper until well combined.
- Bake for 15-20 minutes or until hot and bubbly. Serve warm with your favorite dippers.
