Ingredients
- 8 boneless, skinless chicken breasts
- 1/2 cup extra virgin olive oil
- 1/3 cup fresh-squeezed lemon juice
- 1 tsp fresh lemon zest
- 1 tsp Greek seasoning
- 1 tsp poultry seasoning
- 1 tsp dried oregano
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your grill to medium-high heat.
- Trim fat from chicken breasts; make small slits down each breast for better marinade absorption.
- In a bowl, mix olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning, oregano, and black pepper.
- Place chicken in a Ziploc bag; pour the marinade over it. Seal tightly and refrigerate for 6-8 hours (or overnight).
- Remove chicken from the fridge and let sit for 15 minutes at room temperature.
- Drain excess marinade; grill chicken for about 4 minutes on one side until grill marks appear. Flip and cook another 4-8 minutes until cooked through (internal temperature should reach 165F/75C).
