- 1 head green cabbage, finely shredded

- 1/2 yellow or red onion, finely sliced
- 1/3 cup apple cider vinegar
- 3 tbsp olive oil
- 1 tbsp honey (adjust for sweetness)
- 1/2 tbsp Dijon mustard
- 1 tsp celery seed
- Salt and black pepper to taste
Instructions
- In a large mixing bowl, combine the finely shredded cabbage, grated carrot, and sliced onion.
- In a smaller bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, celery seed, salt, and black pepper. Adjust sweetness as desired.
- Pour half of the dressing over the vegetable mixture and toss until well coated. Add more dressing gradually until you reach your preferred consistency.
- Serve immediately or refrigerate in an airtight container until ready to serve.
