Ingredients
- 1 mini watermelon (about 4 cups, cubed)
- 2 Persian cucumbers (about 1 cup, sliced)
- 3 ounces feta cheese (cubed)
- 1 tablespoon chopped mint
- 1 tablespoon chopped basil
- Juice of 1 lime
- Olive oil to taste
- Kosher salt and fresh ground black pepper to taste
- For garnish: 2 tablespoons fresh parsley (finely chopped)
Instructions
- Cube the mini watermelon and thinly slice the Persian cucumbers.
- In a large bowl, combine watermelon, cucumber, feta cheese, mint, and basil.
- Squeeze lime juice over the mixture and drizzle with olive oil.
- Season with salt and pepper according to taste.
- Gently mix all ingredients until well combined. Serve immediately or chill for later.
