Ingredients
- 1/2 cup unsalted butter (room temperature)
- 3/4 cup granulated sugar
- 2 large egg whites
- ½ cup sour cream
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 ¼ cups all-purpose flour
- 1 tsp baking powder
- Leaf green food coloring
- For the Frosting: 1 ½ cups unsalted butter (room temperature), powdered sugar, watermelon Kool-Aid mix, red gel food coloring, mini chocolate chips
Instructions
- Preheat oven to 350°F and line a muffin pan with liners.
- In a mixing bowl, cream butter and sugar until fluffy. Mix in egg whites, sour cream, milk, and vanilla.
- In another bowl, whisk together flour, baking powder, and salt. Gradually combine with wet ingredients then add green food coloring.
- Fill liners ½ to ¾ full and bake for 17-19 minutes until a toothpick comes out clean.
- Allow cupcakes to cool completely before frosting with buttercream made from creamed butter mixed with powdered sugar and Kool-Aid.
