Ingredients
- 3 cups digestive biscuits or graham cracker crumbs
- 1/4 cup caster sugar
- 1/2 cup unsalted butter (melted)
- 2 cups white chocolate (chopped)
- 1/2 cup double cream
- 1/4 cup unsalted butter
- 2 cups fresh raspberries
Instructions
- Prepare the crust: Crush digestive biscuits into fine crumbs and mix with caster sugar and melted butter. Press firmly into a tart pan.
- Make the filling: Melt white chocolate in short bursts in the microwave. Whip double cream until soft peaks form, then fold in melted chocolate and unsalted butter until smooth.
- Assemble: Pour filling into the crust and top with fresh raspberries.
- Chill: Refrigerate for at least two hours before serving.
