- 8 oz spaghetti or fettuccine
- 1 cup ricotta cheese (whole milk)
- 1/4 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 2 tbsp extra virgin olive oil
- Salt to taste
- Pepper to taste
- 1/4 cup chopped fresh basil or parsley
Instructions
- Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large bowl, mix ricotta, lemon juice, lemon zest, olive oil, salt, and pepper until smooth.
- Add drained pasta to the ricotta mixture and toss until evenly coated.
- Gradually add reserved pasta water as needed for desired creaminess.
- Fold in fresh herbs before serving.
- Plate the pasta, garnish with additional herbs or lemon zest if desired, and enjoy warm!
