  • ¼ cup sun-dried tomatoes
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Juice of 1 lemon
  • ½ cup crumbled feta cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare all vegetables by washing and slicing them. Cut chicken into bite-sized pieces.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add chicken pieces and season with salt and black pepper. Cook until golden brown (5-7 minutes).
  4. Add zucchini, bell peppers, onion, cherry tomatoes, olives, garlic, sun-dried tomatoes, and herbs. Stir-fry until vegetables are tender yet crisp.
  5. Remove from heat; squeeze fresh lemon juice over the stir fry.
  6. Serve hot topped with feta cheese and parsley if desired.
