Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 3 tbsp extra virgin olive oil
- 2 medium zucchini
- 2 red bell peppers
- 1 large red onion
- 2 cups cherry tomatoes
- 1 cup Kalamata olives
- 4 cloves garlic
- ¼ cup sun-dried tomatoes
- 2 tsp dried oregano
- 1 tsp dried basil
- ½ tsp dried thyme
- Juice of 1 lemon
- ½ cup crumbled feta cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Prepare all vegetables by washing and slicing them. Cut chicken into bite-sized pieces.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and season with salt and black pepper. Cook until golden brown (5-7 minutes).
- Add zucchini, bell peppers, onion, cherry tomatoes, olives, garlic, sun-dried tomatoes, and herbs. Stir-fry until vegetables are tender yet crisp.
- Remove from heat; squeeze fresh lemon juice over the stir fry.
- Serve hot topped with feta cheese and parsley if desired.
