- 3 medium-sized Zucchini
- 2 ears of Corn
- 1 teaspoon Butter
- 1/2 cup All-Purpose Flour
- 1/2 cup grated Pecorino Romano
- 1 Large Egg
- 2 cloves Garlic (minced)
- 2 tablespoons Lemon Juice
- 1 teaspoon Lemon Zest
- 1/2 teaspoon Salt
- 2 tablespoons Olive Oil
Instructions
- Shred zucchini using a grater or food processor until you have about 2.5 cups.
- Place shredded zucchini in cheesecloth or a clean towel to remove excess moisture.
- Cut kernels from corn and sauté in butter until tender; combine with zucchini.
- In a mixing bowl, add flour, pecorino romano, egg, lemon juice, lemon zest, garlic, and salt; mix well.
- Heat olive oil in a skillet over medium heat; form patties and cook until golden brown on both sides.
