  • 1 Large Egg

  • 1 teaspoon Lemon Zest
  • 1/2 teaspoon Salt
  • 2 tablespoons Olive Oil

Instructions

  1. Shred zucchini using a grater or food processor until you have about 2.5 cups.
  2. Place shredded zucchini in cheesecloth or a clean towel to remove excess moisture.
  3. Cut kernels from corn and sauté in butter until tender; combine with zucchini.
  4. In a mixing bowl, add flour, pecorino romano, egg, lemon juice, lemon zest, garlic, and salt; mix well.
  5. Heat olive oil in a skillet over medium heat; form patties and cook until golden brown on both sides.
