Ingredients
- 1/2 cup vegetable oil (or 1/4 cup oil and 1/4 cup applesauce)
- 1 1/2 cups white sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose or whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups shredded zucchini
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, mix vegetable oil, sugar, and vanilla until well combined.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients until just combined.
- Stir in shredded zucchini until evenly distributed.
- Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- For frosting: Melt cocoa powder and butter in a saucepan, then mix with powdered sugar and milk until smooth.
- Once brownies cool completely, frost them and slice into squares.
