Ingredients
- 1 zucchini (9 ounces), ends trimmed
- 3 garlic cloves
- Kosher salt
- Olive oil
- 1 ball pizza dough
- 8 ounces mozzarella cheese
- ½ small lemon
- 4 ounces goat cheese, crumbled
- 1½ tablespoons chives
Instructions
- Preheat the oven to 500°F (260°C).
- Cut zucchini in half lengthwise and slice into half moons.
- Toss zucchini with grated garlic and salt; let drain in a mesh strainer for 30 minutes.
- Pat dry with paper towels.
- Stretch pizza dough to fit the pan and lightly coat with olive oil and salt.
- Top with mozzarella, sliced garlic, drained zucchini, lemon slices, and goat cheese.
- Bake on the lowest rack until golden brown (9-11 minutes). Sprinkle with chives before serving.
