Ingredients
- 2 pints Cherry Tomatoes
- 1 pint Fresh Blueberries
- 8 ounces Mozzarella Cheese
- ¼ cup Fresh Basil
- 3 tablespoons Balsamic Vinegar
- 3 tablespoons Olive Oil
- Salt and Pepper to taste
Instructions
- Rinse the cherry tomatoes and blueberries under cold water; pat dry. Halve the cherry tomatoes and place them in a serving bowl.
- Add the blueberries to the bowl and gently toss to combine.
- Drizzle olive oil and balsamic vinegar over the mixture; season with salt and pepper. Toss again until well combined.
- Tear fresh basil leaves into smaller pieces and sprinkle them over the salad.
- Cut mozzarella into star shapes using a small star-shaped cutter (optional) and arrange on top of the salad.
- Serve chilled or at room temperature for a refreshing dish.
