  • 4 tortillas (8 inch)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 5 ounces baby spinach

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a microwave-safe bowl, microwave the sliced mushrooms for 2 minutes to soften. Drain any excess water.
  3. Lay each tortilla flat on a baking sheet, allowing half to hang over the edge.
  4. Distribute half of each cheese type evenly over one side of the tortillas.
  5. Layer the baby spinach and softened mushrooms on top of the cheese, then sprinkle with the remaining cheese.
  6. Fold each tortilla over its filling and press down gently to secure.
