- 8 ounces sliced mushrooms
- 4 tortillas (8 inch)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 5 ounces baby spinach
Instructions
- Preheat your oven to 400°F (200°C).
- In a microwave-safe bowl, microwave the sliced mushrooms for 2 minutes to soften. Drain any excess water.
- Lay each tortilla flat on a baking sheet, allowing half to hang over the edge.
- Distribute half of each cheese type evenly over one side of the tortillas.
- Layer the baby spinach and softened mushrooms on top of the cheese, then sprinkle with the remaining cheese.
- Fold each tortilla over its filling and press down gently to secure.
- Bake for about 6 minutes; flip and bake for an additional 6-7 minutes until golden brown.
