Instructions
- Preheat your oven to 400 degrees F. Prepare your muffin tin by spraying it with cooking spray or lining it with muffin liners.
- In a blender or food processor, combine all ingredients and blend for about 1 minute until well mixed, leaving some oats intact for texture.
- Pour the batter into each muffin cup, filling them about three-quarters full.
- Bake in the preheated oven for 16–17 minutes, checking doneness with a toothpick—it should come out clean when done.
- Allow muffins to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
