Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh blueberries
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 tablespoons fresh thyme (or 1 tablespoon dried thyme)
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine olive oil, honey, thyme, minced garlic, balsamic vinegar, salt, and pepper. Mix well.
- Gently fold in fresh blueberries without smashing them.
- Place chicken breasts in a resealable bag or bowl and pour the marinade over them to coat. Marinate in the refrigerator for at least 30 minutes.
- Preheat oven to 400°F (200°C).
- Heat an oven-safe skillet over medium-high heat; drizzle olive oil. Sear each side of the chicken for about 3-4 minutes until golden brown.
- Pour reserved marinade with blueberries over seared chicken.
- Transfer skillet to the preheated oven and bake for about 15-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Let rest for 5 minutes before slicing and serving.
