  • 1 lb. Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided
  • Salt and pepper
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound chicken to an even thickness and rub with olive oil and blackened seasoning.
  2. Heat a skillet over medium-high heat and add olive oil. Cook chicken for about 3–4 minutes per side until dark amber.
  3. Remove chicken and let it rest while you prepare the sauce.
  4. In the same skillet, melt butter and sauté garlic for 1–2 minutes. Add cream and remaining blackened seasoning; simmer until thickened.
  5. Cook noodles according to package directions; reserve pasta water before draining.
  6. Stir parmesan into the sauce until melted, then mix in cooked noodles and reserved pasta water. Top with sliced chicken to serve.
