Ingredients
- 1/2 cup sugar
- 1 1/2 cups frozen blueberries
- 2/3 cup Greek yogurt
- 1/3 cup heavy cream
- 1 teaspoon fresh lemon juice
Instructions
- In a food processor, pulse the sugar for about 20 seconds until superfine.
- Add frozen blueberries, Greek yogurt, heavy cream, and lemon juice to the processor.
- Puree for 1 minute, scraping down the bowl as needed, then puree again until smooth.
- Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions (about 10 minutes).
- Scrape the mixture into a freezer-safe dish and freeze for at least 4 hours before serving.
