  • 1/2 cup peach nectar or juice
  • 1 lb fresh peaches, peeled and chopped

  • 1 cup packed brown sugar

  • 2 1/2 cups sifted confectioner's sugar

Instructions

  1. Preheat oven to 350°F. Grease a 9×12 inch baking pan.
  2. In a mixing bowl, combine yellow cake mix, eggs, vegetable oil, and peach nectar; blend until smooth.
  3. Gently fold in chopped peaches.
  4. Pour batter into the prepared pan and bake for about 28 minutes or until a toothpick inserted comes out clean.
  5. For the icing, bring butter, heavy cream, and brown sugar to a boil in a saucepan while stirring constantly. Remove from heat and whisk in vanilla extract and sifted confectioner's sugar until smooth.
