Ingredients
- 15 oz yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1/2 cup peach nectar or juice
- 1 lb fresh peaches, peeled and chopped
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 cup packed brown sugar
- 1 tsp vanilla extract
- 2 1/2 cups sifted confectioner's sugar
Instructions
- Preheat oven to 350°F. Grease a 9×12 inch baking pan.
- In a mixing bowl, combine yellow cake mix, eggs, vegetable oil, and peach nectar; blend until smooth.
- Gently fold in chopped peaches.
- Pour batter into the prepared pan and bake for about 28 minutes or until a toothpick inserted comes out clean.
- For the icing, bring butter, heavy cream, and brown sugar to a boil in a saucepan while stirring constantly. Remove from heat and whisk in vanilla extract and sifted confectioner's sugar until smooth.
- Pour icing over the warm cake immediately after it comes out of the oven.
- Allow to cool before slicing and serving.
