Ingredients
- 1 lb uncooked shrimp
- 1 teaspoon Cajun seasoning
- 1 red bell pepper (diced)
- 3 cloves garlic (minced)
- 1 ½ cups chicken broth
- ¾ cup heavy cream (or half and half)
- 10 oz Rotel diced tomatoes with green chilies
- ¾ cup cheddar jack cheese (shredded)
- 1 tablespoon olive oil (or avocado oil)
- 3 tablespoons butter
- 1 tablespoon honey
- 2 teaspoons hot sauce
- 2 teaspoons lime juice
- 1 teaspoon brown sugar
- ½ teaspoon mustard powder
- ½ teaspoon oregano
- 1 pinch cayenne pepper
- 1 pinch red pepper flakes
- Lime wedges
- Fresh cilantro (roughly chopped)
Instructions
- Gather all ingredients; dice the red bell pepper and mince the garlic.
- In a large skillet over medium-high heat, heat olive oil and butter. Add seasoned shrimp; cook for 3–4 minutes until pink and opaque, then remove from skillet.
- In the same skillet, sauté garlic and bell pepper for 2–3 minutes. Sprinkle flour, then gradually whisk in chicken broth while scraping browned bits.
- Add heavy cream, honey, hot sauce, and Rotel tomatoes with juice; simmer for about 5 minutes.
- Return shrimp to skillet; add cheese, lime juice, additional Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes. Stir until heated through.
- Serve immediately over rice or pasta with lime wedges and chopped cilantro.
