  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half and half)
  • 10 oz Rotel diced tomatoes with green chilies
  • ¾ cup cheddar jack cheese (shredded)
  • 1 tablespoon olive oil (or avocado oil)
  • 3 tablespoons butter
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 2 teaspoons lime juice
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • Lime wedges
  • Fresh cilantro (roughly chopped)

Instructions

  1. Gather all ingredients; dice the red bell pepper and mince the garlic.
  2. In a large skillet over medium-high heat, heat olive oil and butter. Add seasoned shrimp; cook for 3–4 minutes until pink and opaque, then remove from skillet.
  3. In the same skillet, sauté garlic and bell pepper for 2–3 minutes. Sprinkle flour, then gradually whisk in chicken broth while scraping browned bits.
  4. Add heavy cream, honey, hot sauce, and Rotel tomatoes with juice; simmer for about 5 minutes.
  5. Return shrimp to skillet; add cheese, lime juice, additional Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes. Stir until heated through.
  6. Serve immediately over rice or pasta with lime wedges and chopped cilantro.
